Our Gin

CLASSIC & BALANCED


At the heart, the liquid introduces a bright and approachable juniper with gentle floral notes on the mid-palate and a crisp clean citrus finish, all working in concert to reflect the sweeter character of a traditional London gin style. Provincial earthiness is highlighted by the supporting cast of botanicals which present bright pine, green leaf aromatics, cheerful notes of mint and echoes of soft, sweet, spicy undertones reflecting the lush rural landscape of Ontario.

Signature Cocktail

THE DELLEMERE


The location of our distillery is in the restored Allan’s Mill. Nearby the mill there was a tavern called Dellemere. It operated in the 1830s, hosting locals and serving the working folk of the community. We’re honouring this history of hospitality by naming our signature cocktail The Dellemere.

The Dellemere

2 oz Spring Mill Vodka or Gin
1 oz freshly squeezed lemon juice
1.5 oz honey syrup
3 mint sprigs
1 mint sprig for garnish

Combine all ingredients and shake vigorously with ice. Double strain into chilled cocktail glass. Garnish with mint.

Our Whisky

OUTSTANDING & RELIABLE


Like many great experiences, time is required to bring them about. That much we know for certain. We also know that creating fine whisky requires a very fine balance of art and science. We asked our Master Distiller to share a few thoughts about what we might expect.

“Believe me, when you ask what will our whisky be like, no one wants to know more than I do,” remarks Doan Bellman. “There are many vagaries in this endeavour and frankly a big part of my task is to reduce the number of variables as much as possible. By doing so we can confidently predict that the products we produce will be of outstanding and reliable quality.”

Doan compares his role to that of the conductor of a symphony orchestra. His job is to ensure that all of the instruments at his disposal are harmonized and gently managed to produce the best. “Where we’re very fortunate, is that we genuinely have a full orchestra with which to work. From the quality of our washbacks, to the sophistication of our brilliant stills, to the extremely carefully built barrels, we feel that in a few years we’ll be bottling malt whisky, Canadian rye, bourbon and an Irish-style tipple that will delight our customers.”
